This rare and exciting Tuscan white wine is made from 100% Sangiovese, the workhorse red grape of Chianti. The juice is separated from the color-bearing skins immediately after destemming and pressing to achieve the wine's lovely pale white color. The wine is then fermented in stainless-steel tanks at low temperatures for about one month, followed by an additional few months of aging in large neutral oak vats. It offers fresh, vivid aromas and flavors of green apples and cut yellow pear, leading to a long, crisp finish. This pairs well with traditional Italian starters of pasta, risotto, seafood, and main courses of light meats and fish.
