Opens with an effusively fruity bouquet of ripe plums, wild violets and subtle minerality. On the palate, the fruit is refined and polished, loaded with notes of ripe cherries seasoned by notes of cracked black pepper and Provençal herbs, all backed by firm, chocolaty tannins, a Gaillac trademark. Tailor-made for a juicy, well-marbled steak, this also pairs well with roast duck in cherry sauce, beef stew, charbroiled lamb chops, and other traditional red meat accompaniments.
