"This incredible white Burgundy is one of the most unique expressions of Chardonnay that I can think of, and one of my very favorite wines. It starts with grapes that mature later than most, followed by a very slow natural fermentation that takes almost two years. It is then bottled and held until they believe it's the right time to drink the wine. That is why this 2019 is the current release when many similar wines are on the 2022 vintage. All of this leads to a wine that is rich, but at the same time has excellent acidity and freshness. The late-maturing grapes do leave a small amount of residual sugar, but it doesn't come across as sweet. I had it recently with an ahi tuna salad with avocado slices and it was delicious. It goes with a variety of cheeses, of course, and many richer fish dishes. Burgundy prices have gone way up the last few years, and this wine is not inexpensive, but it's a fantastic wine that would easily sell for twice the price if the appellation name started with the word Chassagne, Puligny, or Meursault." - Michael Sands
La Cheeserie Pairing: Etorki
The just-released 2019 Viré-Clessé Cuvée E. J. Thevenet is showing nicely, unwinding in the glass with aromas of orange confit, honeycomb, pear and baking spices. Medium to full-bodied, satiny and seamless, it's dense and layered, with bright acids and a charming, suave style despite its concentration. Aromatically, it's still a touch reserved and will really reward a few more years of bottle age.
