“Headlines everywhere, ’Sancerre Shortage!’ Time to think outside the box and into Saint Bris, an AOC of Burgundy that showcases Sauvignon Blanc. The Grivot-Goisot Saint Bris 2022 provides that wet stone minerality and racy acidity reminiscent of a Loire Valley Sancerre. Great as an aperitif or with oysters, seafood, or fish.”

La Cheeserie Pairing: Bucheron Chévre
This is a pasteurized goat's milk made in the Loire Valley of France. The small wheels are aged for two months, developing a hard, but completely edible rind with a soft, almost gooey, and lemony interior. This is a wonderful cheese for spreading, or pressing between two halves of your baguette!
Pale yellow color, bright. Chiseled nose, very expressive, combining floral notes and
grapefruit flesh. We find these citrus notes in a straight, fresh, persistent palate. Beautiful
expression of Sauvignon.
