"Everything old is new again! The L’Ancestral name refers to the Ancestral/Pét-Nat method of making sparkling wines, which have become quite popular. This method predates the Champagne method and uses the carbon dioxide from fermentation to create the bubbles inside the bottle. A refreshing wine made from the almost-forgotten Sumoll grape offering rustic tangy cherry and pomegranate fruit. Presenting a creamy long finish and just the right amount of funkiness. Snazzy expression of Sumoll grape variety. Sour cherry and pomegranate aromas. On the palate it´s juicy and creamy along with a touch of rusticity. Good structure and long finish.
The organic 2022 L’Ancestral Rosé is a sparkling wine made with Sumoll grapes and produced by the ancestral method, with only 11.5% alcohol and a pH of 2.94 and very high acidity (8.1 grams). This is their more radical expression of Sumoll, which finished fermenting in bottle. It's fresh and young, with citrus and yeast notes, with abundant bubbles.
