This semi-soft cow’s milk cheese, named after the village of Morbier in Franche-Comté, eastern France, is distinguished by its iconic thin layer of black ash, which traditionally separates the curds from morning and evening milk. Aged for a minimum of 45 days and up to three months, it has a mild aroma but a rich, creamy flavor with a subtle, slightly bitter finish.
