Named for the mountains in Auvergne, France where it’s produced, Cantal is one of the oldest cheeses made in France. Often referred to as “French cheddar,” Cantal is a semi-hard cow’s milk cheese that is aged for several months, giving it a strong, tangy, buttery flavor that intensifies with age. It is fresh, sweet, and milky in flavor with a light hint of hazelnut and vanilla.
