This Manchego lookalike is made from a combination of cow’s, sheep’s, and goat’s milk. The blend of milks allows it to obtain the grassy, herbaceous flavors of the goat and sheep’s milk while maintaining the smoothness of cow’s milk. It has a firm texture and a buttery, nutty quality and is typically served as table cheese, but is also excellent for cooking.
