Mahon, a cow's milk cheese named after the port of Mahón in Minorca, Spain, features a semi-hard texture with a buttery, salty, and sharp taste. During maturation, it is hand-rubbed with butter, paprika, or oil and is sold at different ages, ranging from 2 to 10 months.
